Every Sunday, we wake up, brew some coffee and make waffles for Waffle Sunday. It’s September, and I LOVE pumpkin – pumpkin curry, pumpkin spice creamer, pumpkin cookies, pumpkin bread. I’m sharing one of my favorite new recipes for Pumpkin Spice Waffles.
This recipe is super easy, and with our new upgraded waffle maker, we have waffles ready to eat (and mostly devoured) in 20 minutes. For most of my waffles, I use Krusteaz waffle mix. It’s fluffy with a great flavor. This recipe uses that as a base – but you can swap out for flour and other bases.
My Littles love chocolate chip waffles. Instead of mixing the chips in the waffle mix and baking it (which makes a huge mess for cleanup), we just sprinkle their waffles with chocolate chips when they are hot from the griddle. Ryan and I prefer sprinkled sugar, and we serve with berries on the side.

Ingredients
- 2 ½ cups waffle mix – I use this one, which we buy in bulk
- 1 T Pumpkin Pie Spice
- 3 T brown sugar
- 1 egg
- 1 ¾ cup Milk
- 1 T vegetable oil
- 1 T white vinegar
- 1 cup pumpkin puree – I use this one
- Powdered sugar or chocolate chips for finish

Instructions
- Add all ingredients in a large bowl.
- Mix all the ingredients in a bowl, mixing until smooth.
- Spray your waffle maker or griddle with nonstick spray.
- Cook until desired darkness.
- Sprinkle with powdered sugar or chocolate chips.
- Devour!

We were using a waffle maker like this one until recently. We just upgraded to this one. With the newer one, the waffles are little larger and clean up seems much easier.
